Paleo Chocolate Chip Apple Muffins

Ingredients 1 bag Enjoyful Foods Chocolate Chip Cookie Mix2 tablespoons maple syrup1/2 cup full fat coconut milk2 tablespoons coconut oil, melted1 egg, room temperature1 small apple peeled and chopped Directions Preheat the oven to 350°F and line a muffin tin with baking cups, or use a non-stick silicon muffin pan
In a bowl, whisk together the syrup, coconut milk, coconut oil, and egg.
Using a rubber spatula, mix the wet ingredients and Chocolate Chip Cookie Mix together. Do not over mix.
Gently fold in the apple pieces into the batter.

Ingredients1/4 cup coconut oil1/4 cup cacao butter (can use coconut oil but have to keep refrigerated)1/2 cup Enjoyful Foods Superfood Cacao Mix1/4 cup almond butter (use tahini or sunbutter for nut free)1/4 cup maple syrup1/4 tsp salt Directions Melt coconut oil and cacao butter in a double boiler, when melted add the rest of ingredients and mix well to combine.Place in cup molds.
