Adaptogenic Cacao Chia Pudding with Golden Mango
Chia Pudding
1 C. plant based milk of choice
1 Tbsp your favorite protein (optional)
1 tsp vanilla extract (optional)
2 drops stevia
Sweetener of choice (add if you like it on the sweet side)
1/4 C. shredded coconut
1/4 C. chia seeds
Mango puree
1 very ripe mango
1/4 tsp turmeric powder
Small sprinkle of black pepper
Add all chia pudding ingredients to a glass jar, shake well to be sure the chia seeds are well distributed.
Leave on your counter or refrigerator for at least one hour or overnight.
For the mango puree, peel the mango and get as much pulp as you can from it discharging the pit. Add mango, turmeric and pepper to blender or food processor, process until a smooth puree forms.
Divide chia pudding between two cups. Top with mango puree. Sprinkle with more Cacao if you want, hey it's not such a thing as too much chocolate.
