Paleo Vegan and Nut Free Sweet Potato Brownies

4 Tbsp flax seed meal
1/2 C. warm water
2 C. Sweet potato cut into cubes and steamed until soft
1 C. pitted dates (soaked for couple of hours if they're not soft)
1/3 C. Cassava flour
1/3 C. coconut oil
1/3 C. Enjoyful Foods Spiced Cacao Mix
1 tsp baking soda
1 tsp ACV
Mix flax meal with warm water, let it sit for 15 minutes to set up and thicken.
Preheat oven to 350 F.
Prep a 9x9 baking dish greasing it with some coconut oil.
In a food processor process sweet potatoes, dates and flax eggs until smooth.
Add the rest of ingredients, mix well until all ingredients are evenly mixed.
Add butter to prepared dish. Bring to preheated oven. Bake 35-40' (depending of your oven).
Remove from the oven and let them rest before you cut them, they're very soft.
These brownies are very soft and chewy, very delicious but if you like a firmer brownie this is not going to work for you.
