Raw Chocolate Pumpkin Fudge - Paleo - Vegan -

Pumpkin season is here and we love it. All kind of recipes come out with this delicious crop but for us here at Enjoyful Foods we have to pair it chocolate and off course spices.
Pumpkins are rich in fiber and offer 100% of the daily vitamin A requirement. Pumpkins also provide lots of vitamin C, riboflavin, potassium, copper, and manganese. Smaller but significant amounts of vitamin E (alpha tocopherol), thiamin, niacin, vitamin B6, folate, iron, magnesium, and phosphorus also are present. (1) Combining all the pumpkin properties with raw cacao one of the most amazing foods in the planet can result in a powerful nutrient dense food.
For this recipe I used our Spiced blend loaded with anti-viral, anti-bacterial spices and ginger to aid digestion.
This recipe is free of gluten, dairy, processed sugar, soy and grains.
1 C. pumpkin puree
1/2 C. almond butter (can substitute for seed butter for nut free)
1/4 C. liquid sweetener (optional)
1/4 C. melted coconut oil
2 Tbsp protein (optional)
1/2 tsp vanilla
Pinch of salt
Line a 6x6 pan with parchment paper.
Add all ingredients to a food processor or blender. Blend till smooth.
Pour mix in your prepared pan, distributing it evenly.
Place in refrigerator for at least two hours. Cut in small squares.
Keep refrigerated.
